Sunday Funday at More Bubbles Brunch at Hedley & Bennett with Chef Nancy Silverton
The exciting festival of all the great bubbles around the world, Effervescence was back in LA over the last weekend 5/3-5/5.
The Highlights included the "once-in-a-life-time" Krug experience dinner, Grand Tasting featuring top Champagne maisons, Michelin-starred Guest Chef Dinners, and Brunch event featuring LA celeb chefs.
I was very fortunate to catch the last event of this series, "More Bubbles Brunch at Hedley & Bennett with Chef Nancy Silverton".
About Chef Nancy Silverton: One of the most celebrated female chefs in LA. Chef Nancy Silverton is the co-owner of Pizzeria and Osteria Mozza in LA and Newport Beach, as well as Mozza2Go and Chi Spacca in LA. She also founded the world-renowned La Brea Bakery and Campanile Restaurant, an institution that Angelenos cherished for decades. In 1990, Nancy was named one of Food and Wine Magazine’s“Best New Chefs.” Also that year, she was named “Pastry Chef of the Year” and “Who’s Who of Cooking” by the James Beard Foundation. In 2014, she received the highest honor given by the James Beard Foundation for “Outstanding Chef” as well as listed as one of the Most Innovative Women in Food and Drink by Fortune and Food and Wine Magazine. Caviar & Smoked Salmon is always the best friend with elegant sparkling wines! The quiche was also super delicious!
And of course, when you are having superb wines, you have to have GREAT cheese...
I have been noticing there is a growing number of England brands entering into US market. I can tell England is getting very active on sparkling wine game. I personally loved the fine bubbles and balanced acidity of this Ridgeview Fitzrovia Rose !
Another country to note for the strong sparkling wine industry presence is South Africa. I was told the number of wineries producing sparkling wines had more than doubled in the past decade. The standout from the table was Backsberg Brut. This is a Kosher-certified wine with a blend of Chardonnay and Pinot Noir. It had the great elegant small bubbles with floral aromas of white bouquet of lily and acacia. Pure taste with great body with edgy mineral nuance.
I met Justin there! He is my Instructor & Mentor from UCLA Extension Wine Education and Management program (I graduated back in 2010). He currently runs his own importer Rinascimento Wine Company and I had an opportunity to taste some natural sparkling wines from his portfolio. What caught my attention was Pojer E Sandri Zero Infinito.
The name Zero comes from.... "ZERO fungicides, ZERO insecticides, ZERO deriva, ZERO clarifying agents, ZERO chemical impact, ZERO antioxidants, ZERO filtrations, ZERO commercial lyophilised yeasts, ZERO sulphurous, ZERO treatments" .... omg this is so serious.
The wine was so unique, packed with umami-flavor and this should pair very well with sensitive dashi-driven dishes.
